Protected Geographical Indication - Puglia - Fiano
Wine obtained by the soft pressing of white grapes – Fiano 100% – planted with a density of 5.500 plants per hectare, trained using the single guyot system.
The Fiano vite, famous for its vigour and strength, although already successfully planted in Apulia, starting from vintage 2001 is at the first regional test of quality bottles. The high acidity, typical of this grape, allows the plants to overcome the summer in the Murge hills preserving completely its genetical endowment.
Intense yellow, with persistent aroma of ripe citrus fruits, lime jam, white flowers, white fruit, and caramel. Alcool 12-12,5%, and elegant salinity well balanced with the structure and the body of this wine. Total Acidity is almost 6,5/1000.
The dry taste, the richness of the structure, and the intensity of the aroma make this wine almost unique in the panorama of white wines produced inside Apulian borders.
It’s a good aperitif with food, perfect with Mediterranean dishes, particularly raw sea-food, calamary, cuttlefish, mussels, octopus and generally fish plates.
Drink it young, within three years after vintage at about 12°. The top seasons have 10 years of fine life. Uncork few minutes before tasting.
