
Fior di Ribes
Castel del Monte – D.O.C.G. – Bombino Nero
Light rosè colour, smell of wild strawberries, raspberries, pink currant, field herbs. Dry taste, full of elegance and delicacy. Organic certified.
Fior di Ribes is produced under the Castel del Monte DOC appellation at Santa Lucia Estate, from organic farming, on calcareous soil. The varietal is “Bombino Nero”, and its vineyard are 25 years old, joined with max 10% of Nero di Troia.
Grapes are harvested at the end of September. Soft pressing, maceration of one hour, must cleaning with full control of the temperature, fermentation and fining of 6 months in steel vats, single bottling during the spring after harvest. Production 2019 represents the first bottling under the Castel del Monte DOCG appellation.
It’s recomended with entries, italian fried dishes, risotto with asparagus; or when relaxing around the swimming pool, joined with Apulian green olives.
The wine is best served at almost 12° c., uncorked few minutes before tasting, and it’s suggested during the first 2/3 years after the harvest.
